Tiramisu

I was craving for Tiramisu last Sunday, and T being the good husband that he is said yes to us having dinner at cheesecake factory so that I can have my tiramisu after dinner. We both ate only half of our dinner entree to save room for dessert. That was totally perfect since I had food for lunch the next day. Most of the time it takes time to get seated especially during dinner time at cheesecake factory but for this visit we only had to wait for around 20 mins. We were pretty prepared for the long wait though and bought research material about the bullion investment that T wants to invest in. We have been in discussion about this for the longest time and we both feel that now is the best time to do so but at the same time we are still apprehensive so we are both doing our research. You can't really blame us if we are careful with all the expenses and investments that we make especially since we have a growing family.
It was a wonderful sunday dinner. A perfect way to end our busy weekend.

Shaved Ice

It's summer in my side of the earth and so far it has been really nice other than 2 weeks ago when it was really hot. I'm thankful that the weather has improved over the past few days but since it's still summer I know the summer heat is going to make a great comeback. Since it's summer ice cream has been a staple for me. But if I keep on eating ice cream not only will my sugar increase but my weight too. I might need everything they sell at quickweightloss.org. Thank God for a "healthier" alternative--shaved ice. It's fresh fruits, milk and shaved ice.
We had this 2 weeks ago. The picture above is of a small order that I shared with T. We of course didn't finish it as it's was huge! Now, I'm craving for shaved ice again.

Mango Panna Cotta

Let me share a really easy but yummy receipe of Mango Panna Cotta.

1/4 cup milk
1 tablespoon gelatin
1 cup cream
*1/4 pc vanilla pod, seeds scraped
3 tablespoons sugar
1 pc. mango, diced

Pour milk into a small bowl and stir the gelatin powder. Set aside. In a saucepan, stir together the cream, vanilla seeds, vanilla pod and sugar, and set over medium heat. Bring to simmering. Pour the gelatin and milk into the cream, stirring until completely dissolved. Remove from heat, and let steep for a while before lifting out the vanilla pod. Pour in serving glasses and let set in the fridge. When set, top with diced mango.

I use vanilla flavoring instead of the vanilla pod. This recipe is also good for 3-4 persons so just double the ingredients if you need to make more. I like this recipe because it's not too sweet. You also have the option to substitute the mangoes to any other fruit like peaches or blueberries. It's a perfect dessert for your Christmas parties because it's so easy to do.
